TETSUYA Wakuda’s love of Tasmania is well known — the state’s Petunia ocean trout features as the signature dish on his award-winning menu.

So it was only a matter of time before he considered expanding his brand to the Apple Isle.

Wakuda, whose eponymous Sydney restaurant is regularly voted among the 10 best in the world, has confirmed he is in discussions with Hobart’s Moorilla Estate, with a view to getting involved in its restaurant ventures.
