What a splendid aperitif this delicate dry sherry makes, especially when you’re sipping it on a sunny balcony, nibbling olives and freshly roasted almonds as they do in Spain.

TioPepe is a quintessential exercise in restraint, from its nutty, slightly appley bouquet, through its subtle, refreshing palate to its lingering, just ever so slightly bitter finish.

For me, top-class fino sherry is the best of all aperitifs because it tantalises the palate and builds a desire for food, without any of the fullness that a couple of glasses of sparking wine can leave you with.
